I normally post my articles with a medium-sized picture, but this post deserved a ‘larger’ photo so you could see exactly how delicious this Dreamsicle Dessert looks – it tastes even better! I remember when I was a kid eating Dreamsicles, or Creamsicles as they are sometimes called. My mom would buy them from the Schwan’s delivery man. A heavenly ice cream bar consisting of vanilla ice cream coated with an orange sherbet-flavored outside covering – that delicious combination is hard to beat but this dessert comes as close as you can get. It REALLY does taste like a Dreamsicle! Only 4 ingredients, about 25 minutes to make, a few hours to chill, and then you can dig in. Rick and I ate a whole batch in one sitting (ok, I probably shouldn’t have admitted that!!) Try it – you will love it! Oh, and the kids will love it too!
1 small box of orange Jello (I use the sugar free version)
1 small box of instant vanilla pudding (I use the fat free/sugar free version)
1 (10 oz) can of mandarin oranges, drained (if you really love mandarin oranges you can add two cans)
1 (8 oz) container of Cool Whip Lite, thawed
Dissolve Jello in 1 cup boiling water. Mix well.
Add 1/2 cup cold water, mix well and let sit in the refridgerator for 25 minutes.
With a mixer or whisk, add vanilla pudding packet to the Jello and beat until well mixed and completely smooth.
Fold in oranges and Cool Whip with a spatula, being careful not to mix it too hard.
Refridgerate until completely setup and cold.
